Obtained only by manually harvested grapes (100% Vermentino), left to dry in the shade on racks for about a month. After a brief cold maceration, which allows the extraction of aromatic substances, it fermentes in stainless steel tanks where it rests for a few months at a controlled temperature of about 15-16°C.
